A perfect match for Grüner Veltliner?
First time we could not decide what this wine would go with. We tried it with a selection of sushi – without much luck. Until the tonkatsu sushi – a roll with a piece of crisp, marinated breaded fried pork. The crunch of the crispy crumbs, the marinade and the rice made a perfect combination with the Riverby Estate 2013 Grüner Veltliner.
Next job was to try to upscale the sushi roll into a full-sized ‘tonkatsu’. The sauce works as a perfect compliment to the balance between the pork, cabbage and the wine.
It would go with Japanese tonkatsu, Polish Schabowy, Austrian Schnizel or the Italian version - cotoletta. It's all about the sweet flavours of the pork and the crispy crunch of the breadcrubs - the French 'panure'. Make sure the wine is well chilled as well,
Pinot & Pizza
When thinking of pizza most of us would think cold, crisp beer. And it is a perfect match. But sometimes, with some nice, crisp base pizzas garnished with white sauce, a bit of chorizo or pepperoni and peppers good, New Zealand Pinot Noir is just the perfect match.
Serve it a little bit cooler than usually to add the refreshing feel you would get from a cold beer and enjoy the flavoursome white sauce (mix of mozzarella, ricotta, some parmesan – or even better some pecorino, garlic and a pinch of salt) complemented by the crisp Pinot Noir (e.g. Marlborough Riverby Estate). With the white base and some stronger cheese light reds are just a perfect match. Add some peppers and chorizo on the pizza for more juicy experience and enjoy!
