First time we could not decide what this wine would go with. We tried it with a selection of sushi – without much luck. Until the tonkatsu sushi – a roll with a piece of crisp, marinated breaded fried pork. The crunch of the crispy crumbs, the marinade and the rice made a perfect combination with the Riverby Estate 2013 Grüner Veltliner. Next job was to try to upscale the sushi roll into a full-sized ‘tonkatsu’. The sauce works as a perfect compliment to the balance between the pork, cabbage and the wine. It would go with Japanese tonkatsu, Polish Schabowy, Austrian Schnizel or the Italian version - cotoletta. It's all about the sweet flavours of the pork and the crispy crunch of the breadcrubs - the French 'panure'. Make sure the wine is well chilled as well,
